Why You’ll Love This Recipe
If you have tried in vain to make crispy, homemade potato chips in your own kitchen, this recipe is the answer to all your potato chip making woes! You will, of course, need an air fryer for this recipe. But if you don’t have one yet, what are you waiting for?!!
I’m not a big fan of most trendy kitchen gadgets and home appliances, like the Instant Pot, for example. But air fryers are one cooking trend I 100% support!
- Crispy, golden perfection: These chips come out of the air fryer with light, crispy, and perfectly crunchy.
- Wholesome ingredients – Just a handful of pantry staples (potatoes, olive oil, and a few seasonings) make this snack a fresh, homemade alternative.
- Customizable seasoning: I like using paprika for a subtle smoky flavor, but you can totally make them your own.

Recipe Tips
- A mandoline is your best friend here: Thin, uniform slices are key to crispy chips. A mandoline makes this quick and easy–just watch your fingers!
- Don’t skip the soak! It helps remove excess starch, which results in crispier chips.
- Don’t skip the drying either! After soaking, be sure topat the potato slices completely dry with paper towels. Any residual moisture can lead to soggy chips.
- Don’t overcrowd the air fryer: Cook in batches if necessary to ensure the potato slices lay in a single layer so they have room to crisp up properly.
Storage
- Cool completely: Before storing, make sure the chips are fully cooled to prevent trapping steam, which can make them soggy.
- Use an airtight container, like a resealable container or zip-top bag.. Make sure it’s really airtight to keep out moisture.
- Store at room temperature, in a cool, dry place and enjoy within 2-3 days. Avoid the fridge—it will make the chips soft.

Variations and Fun Twists
- BBQ Style: Season with a mixture of brown sugar, smoked paprika, onion powder, and chili powder for a sweet and smoky flavor.
- Garlic Parmesan: Toss the chips with garlic powder and some finely grated Parmesan right after air frying.
- Salt & Vinegar: Soak the sliced potatoes in white vinegar instead of water, then season with sea salt before air frying.
- Sweet Potato Chips: Swap out regular potatoes for sweet potatoes for a sweet and salty snack.
