Ingredients 

  • 2 large Russet potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • pinch pepper
  • 1/2 teaspoon paprika
  • fresh parsley minced

Instructions

  • Using a mandoline, thinly slice 2 large Russet potatoes. Transfer to a large bowl and cover with ice water. Soak for 15 minutes, then drain.
  • Lay potatoes on a paper towel lined baking sheet and dry thoroughly. Place potatoes in a large bowl and drizzle with 1 tablespoon olive oil. Sprinkle with 1/2 teaspoon salt, pinch pepper and 1/2 teaspoon paprika and toss to coat well.
  • Preheat air fryer to 375 degrees. Add potatoes to air fryer basket in a single layer. Cook for about 15 minutes, shaking basket twice during cooking, until potatoes are golden brown and crispy.
  • Garnish with fresh parsley before serving.
